Holiday Recipe of the Day: Marion’s Christmas Cheese Ball

This holiday season, prepare for unexpected guests by whipping up a Christmas cheese ball. All you need is a 8 ounce package of cream cheese, which you can substitute for Neufchatel cheese in the same amount, along with 2 ounces blue cheese and ½ cup dried cranberries. Mix these three ingredients using a spoon or your hands until they are evenly blended. Mold the cheese ball into a round shape and wrap securely with plastic wrap. Place the covered cheese ball in the refrigerator for 30 minutes to chill.

Chop 1 cup of pecans into a fine grind. You can use a coffee bean grinder for this step to save time. Just before serving the ball, remove from the refrigerator and remove the plastic wrap. Spread out the pecan pieces into a thin layer in a flat dish or plate. Roll the ball of cheese gently over the pecans, slightly pressing to form a nutty crust on the cheese ball. Serve the completed Christmas cheese ball along side a spread of sour dough bread bites or crackers.
