Nothing says Spring more than a good old-fashioned BBQ. But grilling can get boring if you keep doing the same thing over and over again. Therefore, we thought we’d provide you with a fresh new Spring BBQ recipe to kick off the season right.
Garlic Marinated Grilled Shrimp
This is a great recipe whether you’re grilling inside using your countertop grill or whether you’re grilling outside using your traditional grill. Just don’t forget to soak the wooden skewers for a minimum of 30 minutes before using, otherwise they’ll burn.
Ingredients:
Makes six servings
- 1 cup of olive oil
- 1/4 cup of fresh parsley – chopped
- the juice from one fresh squeezed lemon
- 2 tablespoons of hot pepper sauce
- 6 cloves of finely minced garlic
- 1 tablespoon of tomato paste
- 2 teaspoons of dried oregano
- 1 teaspoon of sea salt
- 1 teaspoon of black pepper
- 2 pounds of jumbo shrimp – peeled and deveined (leave the tails on)

Directions:
Mix together the olive oil, the parsley, the lemon juice, the hot sauce, the garlic, the tomato paste, the oregano and the salt and pepper. Set aside a small amount for basting. Take the remaining marinade and put it into a large resealable plastic bag and add the shrimp. Seal the bag and shake well to coat all the shrimp. Now allow the shrimp to marinate for at least two hours. After marinating, preheat your grill to a medium-low heat. Thread the shrimp onto the skewers by piercing once near the tail and once near the head. Do not re-use the marinade! Lightly oil your grill’s grate and cook the shrimp for five minutes on each side or until it looks opaque. Use the fresh marinade you set aside earlier to baste the shrimp often. Now enjoy!
