Grilled Garden Salad Makes a Great Addition to Summer BBQs

Summer is the perfect time to fire up the grill and have a few friends over to celebrate warmer temperatures and longer days. Meat is usually the star of the grill, but you’ll impress your guests with this simple grilled vegetable salad, courtesy of Kraft Foods. It’s easy to put together and pairs well with a variety of main courses, including grilled chicken, fish or even burgers.

In the event there are leftovers, the salad makes a delicious filling for tacos.

Grilled Garden Salad

Ingredients
2 ears corn on the cob, husks and silk removed
2 small  yellow squash, each cut lengthwise into 3 slices
2 small  zucchini, each cut lengthwise into 3 slices
2 tomatoes, chopped
1/3 cup  KRAFT Zesty Italian Dressing
2 Tbsp.  lemon juice
1 clove  garlic, minced
3 Tbsp.  KRAFT Grated Parmesan Cheese
2 Tbsp.  chopped fresh basil
Directions

Heat the grill to medium-high heat. Grill corn 15 minutes or until kernels are tender and browned, turning occasionally; cool slightly. Meanwhile, grill squash and zucchini 5 minutes or until tender, turning occasionally.

Cut kernels off cobs using a serrated knife; place in medium bowl. Chop squash and zucchini into bite-sized pieces. Add to corn with tomatoes; mix lightly.

Mix dressing, lemon juice and garlic. Add to vegetable mixture; mix lightly. Top with cheese and basil.

Tip: Add six slices of crumbled bacon to the salad for a more hearty flavor, or try different types of cheese. Feta or goat cheese work well in this recipe.
