Hand Pies For Your Celebration
On Memorial Day, we are reminded of the great sacrifice so many men and women have made to protect the freedoms we enjoy in America. To honor and celebrate them, many of us will gather our friends and family together. When you do, you can make the day extra special with pie, because what is more American than pie? To create easy grab-and-go strawberry hand pies, use this tasty recipe.
- 2 1/3 cups of flour
- 1 1/4 teaspoon of salt
- 1 teaspoon of baking powder
- 1 stick of unsalted butter
- 2 large egg yolks
- 1 teaspoon of vanilla extract
- ¾ pound of strawberries, chopped
- ½ cup of confectioners’ sugar
- 3 tablespoons of strawberry jam
- 1 tablespoon of sanding sugar
Preheat your oven to 350 degrees F. In a large mixing bowl, stir together 2 ¼ cups of the flour with 1 teaspoon of salt and the baking powder. With two knives, cut the butter into the flour mixture. Add one of the egg yolks, a half cup of cold water, and ½ teaspoon of vanilla and mix just until combined. If the dough is not holding together, add up to 3 tablespoons of water.
Knead the dough on a lightly floured surface just until combined. Put back in the mixing bowl, cover with plastic wrap, and leave in the refrigerator for 15 minutes.
Meanwhile, stir the strawberries, confectioners’ sugar, jam, remaining flour, remaining vanilla, and remaining salt together.
In a small bowl, beat the other egg yolk with 1 tablespoon of water.
Remove the dough from the refrigerator and roll it out to ½ inch thickness on a lightly floured surface. Cut 6 rounds with a 3-inch circle cookie cutter.
Roll each round into a 6-inch circle and spoon two tablespoons of the strawberry mixture into them. Brush the edges with the egg yolk, fold in half, and crimp with a fork to seal.
Poke holes in the top of each pie, brush with the egg, and sprinkle with sanding sugar. Bake until golden brown (30-35 minutes), let cool, and enjoy!
